Korean like beef strips

Today I am in the mood for some thing simple, different but tasty. I felt the need to impress my Noelwith some thing good. I know she is tired of the stir fry. Ofcourse beef is her favorite and i don't want to spend a lot of time in the kitchen. So here it goes..


 Beef strips
Soya sauce
Garlic chopped
Black pepper powder
Chilli pepper
Sugar 1tsp
sesame seeds
sesame oil 1 tsp
Marrinade beef with all these ingredients.
Leave it in the fridge overnight.
In a large vessel, pour sesame seed oil, be liberal with the oil.
When the oil heats up add the beef and fry for 10 minute, then cover with the lid and cook untill the beef is tender and all the water is absorbed.
Open the lid and fry for another 15 minutes. Add green onion or chives mix well garnish with green onion and sesame seeds

Mangolian Beef



Mangolian beef
Beef sliced 2lb
Ground black pepper 1 tsp.
Ginger 1 tbsp
Garlic 1.5 tbsp
Soy sauce 1/4 cup
Pepper flakes 2 tbsp
Brown sugar 2 tbsp
Cornflour 1 tbsp
Oil
In a large pan, fry chopped ginger garlic untill brown.
Add soy sauce 1/5 cup water and brown sugar, boil for for about 2 min. Set it aside
Cook the beef with 1tsp -2tsp black pepper. Coat with cornflour. Deep fry the coated beef untill sides are brown.
Add the beef in to the sauce mixture and coat well add pepper flakes and mix well.

Home made pizza


I have never met a person who doesn't like pizza, who didn't have the cravings for pizza.. Now that was me last week.. I didn't want store brought pizzas since it is not up to my standard these days. I wanted to make one just the way I like.
Came home talked to Noel( my daughter). She is all for it. So here it comes
Pizza Dough
All purpose flour 2 1/4 cup
Active dry yeast 1 tsp
Sugar 2 1/2 tsp
Salt 1/2 tsp
Vegetable oil 2 tbsp
Warm water 1 cup
In a small bowl combine flour salt sugar yeast. stir well to combine. Add vegetable oil and water to the mixture. Make a soft dough. Cover and keep it in a warm place to rise until it doubled in volume.It takes about 40 minutes. (I used my oven)
Take the dough out and spread it on to the pizza pan. use your hands to spread. put it back in to the oven to rise again for about 10 15 minutes.
While the dough is rising, prepare your favourite toppings.
For Toppings
Pizza sauce/ tomato sauce enough to cover the pizza
Mozzarella cheese 1 ball
Pepper flakes to sprinkle
Bacon
Peperoni
Red Onion sliced
JalapeƱo pepper
Olives circles
chop the bacon and fry to a golden brown. Grate mozzarella cheese.
Take the pizza dough out spread the tomato sauce with a spoon. Spread 1/4 of grated cheese now add all your favourite toppings. Top with the rest of the cheese. Pre heat your oven to 450 . Bake for about 20 minutes.
I would add some oregano and basil and garlic if using plain tomato sauce

Shepherds pie



Ground beef 1 kg
Onion chopped 1
Ketchup 2 tbsp
Black pepper 2 tsp
Chili pepper (optional) 1 tsp
Worcestershire sauce (optional) 1 tsp
Garlic 3 clove
All purpose flour( maida) 2-3 tbsp
In a large pot brown ground beef with onion. add rest of the ingredients ingredients and cook for another 2 minutes. add salt to taste. Be sure to break the lumps while you are cooking
Mixed vegetable diced 2 cup
Mashed potato 4-5 cups
I used Diced carrots corn, beans and peas for mixed vegetables.
Add the mixed vegetable to the meat mixture and cook until vegetables are tender.
In a rectangular pan, layer the meat mixture. Top it up with mashed potato sprinkle some paprika or chili powder to give some color. I've also doted with some butter. Preheat the oven under 375 c. cook the pie for about 1/2 hr or until light golden brown.

Spicy BBQ Beef steak

Beef steak                    1/ person
Garlic powder
Onion powder
Black pepper
Pepper flakes
salt
Soy sauce 1/4 cup
Sprinkle all the ingredients except soy sauce. on to the steak until both sides are covered. in a baking dish pour soy sauce and arrange the steak. Let it marinade over night. I marinade for about 12 hrs.
Preheat the BBQ to about 400 c. Turn it down to medium. Smear some oil in to the grill the place the beef steaks. cover with lid and cook for about 7 minutes on each side. sprinkle some more spices on to the side where the soy sauce was. Also pour the soy sauce over the beef while it is cooking. Insert a knife in to the beef. if it is going easy beef is done.

Chilli con carne

Ground beef             2 lb
Kidney beans           1 can (792 ml)
Crushed tomato        1 can
Chili pepper              1.5 tsp
Cumin seed               1 tsp
Garlic chopped          2
Oregano chopped      1.5 tsp

 shredded cheddar cheese     optional


Cook the the ground beef for about 15 minutes under medium heat or until well cooked.  Remove excess fat.Add the rest of the ingredients  and cook under low heat for abut 15-20 minutes . Add shredded cheddar cheese if you like. Goes well with the corn muffin or baked potatoes.

Spicy T Bone steak

T bone steak               4
Black pepper              1 tsp
onion powder              3/4 tsp
Garlic powder              3/4 tsp
cayenne pepper            3/4 tsp
coriander powder         1/2 tsp
Turmeric powder          1/2 tsp
Salt                               1/2 tsp or as needed
Paprika                          1/2 tsp


Wash and Pat dry the steak well. Mix all the ingredients together. sprinkle on to both sides of the steak . Do not over spice it. Let it sit for 2-3 hours in the fridge.
Preheat  a bottom heavy pan. add 2 tsp oil. Put the steak in to the grill and cook  under medium heat for about 6-7 minutes . Turn the steak to the other side and cook for another 6-7 minutes Use a tong to move them slightly so they don't stick to the bottom. Serve hot


Slow cooker Roast Beef


Outside  round Roast Beef               1.1/2 kg
Onion chopped                                1
Celery                                              2 stems sliced
Carrots sliced                                   1
Green pepper                                    1 optional
Black pepper                                     1 tsp
Garlic powder                                    1 tsp
Salt                                                     1/2 tsp
Soy sauce                                          3 tbsp
Ketchup                                              2 tbsp





Marinade the Beef with black pepper, soy sauce, Garlic, ketchup and salt. Place the onion celery  and carrots slices in the slow cooker.Place marinated beef on top of the vegetables . add water to cook. water should come up to about 1/2 of the beef. Cover the pot and cook in low heat for about 6 hrs.

Beef ularthiyathu

1.Beef Diced                    3 cup
2.Green chilli                     2
3.Tomato chopped            1
4.Ginger                            1/2 tbsp
5.Garlic                              4 cloves
6.Garam masala                  1tbsp
7.Turmeric                           1/4 tsp
8.Cloves                               7
9.Aniseed                             1/tsp
10.Black pepper                     1/4 tsp

Coconut oil                       4 tbsp
Coconut slices  1/4 cup
 onion sliced        1 small




Was and and squeeze the water out of beef as much as possible.Mix 1-10 ingredients together and cook well.
Be sure to cook until all the water is absorbed, Turn the heat down if it starts to to stick to the bottom. In a large frying pan heat the oil  add coconut pieces , onion curry leaves for 2 minutes. add the cooked beef pieces and fry in medium heat.

Sausage Theeyal

Sausage Theeyal


Hot Italian sausage                              3
Oil                                                       1 tbsp
Pureed creamed coconut                      1 pack   (180g)
Tamarind paste                                     1/2 tsp
Puree tomato                                        2 tbsp
Onion sliced                                          1
Red chili powder                                   1tsp
Coriander powder                                 1tsp
Geera                                                    1/4 tsp
Mustard seed                                          1/4 tsp
Curry leaves                                             2


Remove the skin off from the sausage and crumble the meat.In a large pan Fry crumbled sausage until golden brown. Keep it aside. Make a paste with  chili powder coriander powder, puree tomato and gerra. Heat the oil and splatter mustard seeds then add sliced onion. turn the heat down and add the chili powder paste fry in low heat until the oil comes out clear. Remove the marinade from the heat and keep it aside with the sausage. Turn the heat to medium add the coconut puree  and fry until it turns golden brown . Stirring constantly while you are browning the coconut.Be sure not to burn it. Add 2 cups of water marinade , sausage and salt. Cook until the sausage is cooked well. mix the tamarind paste with little water add to the curry cook for 5 more minutes. This is good with chapati or rice.

Usually theeyal is made with vegetable.I received this idea from a face book page. I tried it at home it was well received.

Beef Stew

Beef Stew

Beef diced                 2 kg
Potato diced              2
Carrot sliced              1
Green Chili                2
Coriander seeds         1 tsp
Onion Diced               2
Black pepper              1 tsp
Garlic chopped           1 tsp
Cloves                        1 tsp
Bay leaf                       2
Salt                              as needed
Flour                           1 tsp
Beef Broth                   1 cup
Coconut milk or milk    1-2 cup


Heat oil in a large wok. fry coriander seeds, bay-leaf, cloves till its aroma comes add black pepper and garlic. Turn the heat down to low add teaspoon flour and fry until light brown. Add beef and onion, green chili  turn the heat to medium fry for about 5 minutes.Turn the heat high and add 1 cup beef broth or water cook until the beef is almost cooked. Stir in potatoes and carrots. cook until beef is soft. turn the heat to low and add coconut milk to reach the desired consistency. For a lighter version you can substitute broth, coconut milk and milk with water

Beef and potato Casserole


  1.  Lean ground beef            1 kg
  2. Onion diced                     2 medium 
  3. Black pepper                   1 tsp
  4. Red chili powder              1 tsp (optional)
  5. Garlic Chopped                1 tsp
  6. Parsley dried                        1tsp
  7. Salt                                   as needed
  8. cream of mushroom soup   250 ml
  9. Worcestershire sauce         1 tsp
  10. Potato diced                       5 no
  11. Grated  Cheddar cheese   1/4 cup



In a large skillet, brown the ground beef for about 10 min. Be sure to break lumps while cooking. Drain  excess fat. Add 2-7 ingredients and cook for about 2 more min. Add Worcestershire sauce Add diced potatoes and cream of mushroom soup cover with a lid and cook well. When the potatoes and soft enough to bite stir again so that all ingredients are evenly mixed. Turn the heat down add cheddar cheese on top. cover with lid cheese will melt in a minute or so. I also added some chili flakes on top. Serve hot with dinner rolls and your favorite veg.

Pita pocket

Pita pocket


Pita is a slightly leavened round flat wheat bread, and variable in size. Its history extends far into antiquity. Flat breads in general, are among the most ancient breads. Most pitas are baked at high temperatures (450 °F . I made this on a stove top. Much of pita's popularity in the Western world since the 1970s is due to expanded use of the pocket types of sandwiches.
                This pitta pocket is an easy lunch item for the kids. I used to buy store brought pita. one  Sunday night I realized i had  no bun or pita for sandwich for Monday lunch. ( stores are not open after 5 pm on Sundays) Rice and curry is out of the question for lunch. I decided to give it try to make pita bread. lucky, it came out well. kids loved it.  I also add shredded lettuce tomatoes and shredded cheese on top of the meat.


For the Dough:
Whole wheat flour     3cup
Yeast                          1tsp
Warm water                 1.1/4 cup
Sugar                           2tsp
For Filling:
Ground beef           21b
Flour                       2tsp
Tomato                   2 medium size chopped
Oregano                  1tbsp.
Garlic  Chopped     1tsp
Black pepper           1tsp
Chilli pepper            2 tsp.



In a medium bowl Mix sugar and warm water.Sprinkle yest and mix well let it stand for 15 minutes. In a large bowl mix flour, pinch of salt.  Make a well add the yeast mixture. make Soft dough. Add more flour if needs to. Let it stand in a warm place for 2 hrs. Divide the the dough in to 6 small balls. Roll in to 1/4 thick 6"circles. Heat the pan add each pitas in to the pan for about 2 min in each sides cover with with lid while cooking. The bread will puff up.

Filling:
Heat the pan. add flour and fry until light golden brown. Add ground beef and rest of the ingredients except tomatoes,and mix well. Cook well until the oil comes out clear. add chopped tomatoesand cook for about 5 more minutes.

Cut pita into two halves. Open  up slowly. spoon in the fillings. You can also add  shredded lettuce and cheddar cheese.

Such a delicate taste for so humble creature. Lamb is a very versatile meat and readily available at local markets. Yet surprisingly, lamb is not a big favorite in Canada. Chops may be cooked in various ways, including grilling, pan frying broiling, sauteing,braising, breading and, baking, and so on. Lamb chops are often cooked with dry heat, grilled or pan-broiled. Chops are classified as center cut or shoulder cut.

Ingredients:
Lamb chops           4 
 Ginger                       2tsp
Garlic                          2tsp.
Green chilli                 2     
   Onion                           1 small
     Salt                               1tsp           
Grind all ingredients together marinade well leave it for over night.
Cook them in a covered pan under medium heat for about 2o- 25 minutes or until all juice evaporates and the fat comes out clear. turn to both sides every 10 minutes

  • Lamb chops        4
  • Garlic chopped   1/2 tsp.
  • Rosemary            1tsp.
  • Oregano               1tsp.
  • Bay leaf                2
  •  Black pepper        1tbs
  • Pepper flakes         1tsp 
  • Salt                         as needed        


Wash and clean lamb chops well. I always add lemon juice to the water to wash . Chop and mix all ingredients except bay leaf  together. spread the marinade over the lamb, then leave in the refrigerator for 2hours. Pre heat the oven for 400 degree. Bake for about 45 minutes.

Slow cooker Pot Roast 

It took me several tries to come with a perfect looking pot roast. I use to make it in the oven and it always  came out dry. So one day I decided to use my slow-cooker. Actuality I did not have the oven free. To my surprise it was a hit.Also I didn't have to spend much time . Add all ingredients tun the pot on and it was done. The roast was moist and juicy only need a fork to cut it. I used extra green pepper to make it a bit more spicy. still was mild for us. I also used the juices to make the gravy.
                
Roast beef           1 roast
Black pepper       2 tbsp.
Green pepper      2 (optional)
Bay leaf                1
Garlic                   4 cloves
Onion                   1 Sliced in to 2 halves
Cloves                  5
 Salt                      1 tsp.

Wash and place your Roast in the slow cooker. Add water so that it will reach up to 3/4 of the roast.
Add all the ingredients  Cover and cook for about 4 hrs.  Pour the juice over the Roast occasionally. Insert a butter knife in to the roast if it goes down easy Roast is done.  You can use the remaining juice to make the gravy.
